A Japanese Aesthetic Experience- 04/19/07
I had one memorable dinner in the town of Arita, Japan where the chef collaborated with a famous local potter and created an aesthetic experience to create a truly memorable taste and visual experience. This is what Kiyotaka Shinoki, the chef at Chanto has created in New York. Each dish is a creative inspiration, using the food and dishes in unexpected ways. The food creations are inspired by a combination of local ingredients combining western tastes and Japanese flavors -- the chicken wing filled with Japanese pork gyoza dumpling stuffing marinated in teriyaki sauce was superb, |

the kobe beef steak was amazing, not to leave out the intrigue and variety of sashimi. We has a tasting of deserts, all were wonderful but the warm chocolate mousse with a green tea center was heavenly. The pottery is by Yasuhiro Kohara, a top Japanese potter who is well known throughout Japan, he is represented by Dai Ichi Gallery in New York City. |

It is quite incredible to eat off plates you have just seen at the gallery with price tags in the thousands of dollar range. Since the true Japanese culinary experience is as much about the pottery as the food, where the selection of
dishes come first and inspire what is cooked, this is the first restaurant outside of Japan where this merging of art and food can be fully experienced. I have been a buff of David Bouley’s Japanese/Italian creations in his new little spot on Duane Street, sorry David you don’t come close! |
